These courses were developed by a collaborative group of food safety, cheese, and online learning experts from the University of Wisconsin-Madison, University of Connecticut, Cornell University, and NC State University.

When<\/strong>
The courses are self-paced, which means you may begin, pause, continue, and finish at whatever schedule suits your needs. The course will remember where you are when you pause or stop. A certificate of completion will be made available as a PDF after you successfully complete each online module and quiz.

This program takes approximately 5 hours to complete.

$175 USD for all or $35 USD per course

Credits<\/strong>
Upon successful completion of this curriculum or any of the courses herein, participants will receive a certificate of completion

Target Audience<\/strong>
This curriculum is intended for food safety novices who are engaged in the process of making and distributing cheese products.

Technology Requirements<\/strong>
Participants will need a computer with Internet access. The web browser, Google Chrome, is highly recommended because it is more compatible with the learning modules than certain other browsers. This online curriculum was created to assist artisan and farmstead cheesemakers in developing their food safety programs and complying with food safety regulations and standards. <\/p>\n\n\n\n

Funded by the Innovation Center for U.S. Dairy,<\/a> it was designed and written by a collaborative group of food safety and cheese experts from the Innovation Center for U.S. Dairy, University of Wisconsin-Madison, University of Connecticut, Cornell University, <\/em>and NC State University. <\/em><\/p>\n\n\n\n

This curriculum is intended to equip artisan and farmstead cheesemakers with basic knowledge about food safety concepts. It serves as a primer for further training programs such as developing and implementing a preventive controls food safety management plan. <\/p>\n\n\n\n

The curriculum consists of five online courses, each of which includes an interactive learning module with professional voiceover, video, and an accompanying quiz:<\/p>\n\n\n\n

Course 1: Importance of Food Safety<\/em><\/p>\n\n\n\n

Course 2: Regulations and Standards<\/em><\/p>\n\n\n\n

Course 3: Food Safety Hazards<\/em><\/p>\n\n\n\n

Course 4: Good Manufacturing Practices and Process Controls<\/em><\/p>\n\n\n\n

Course 5: Environmental Pathogen Monitoring and Testing<\/em><\/p>\n\n\n\n
